When it comes to serious listening, one speaker is all you need. If you want to try and simulate a venue, surround sound is what you need. If you want personal music, headphones are what you need. In every case you do best with material recorded and processed with the final configuration in mind, or in a more ideal world, has enough data to be processed to match the use.
Stereo is always a compromise and except for the unique condition of two performers, one at each microphone, it's not optimal. But I find it a satisfactory compromise.
Audiophiles were a big force (farce?) long before Stereo. I'm old enough to remember, sigh. It's about sound quality, not about configuration. Since surround sound with speakers and binaural recordings with headphones are the least compromised configurations I would expect stereo to die off when we do.
But just wait until YOU get old and your kids want to know why you stick with your surround sound instead of a direct brain stimulating helmet...
