The Tascam DA-3000 is a great tool for converting analog signals to digital and recording them. It does PCM up to 192KHz and DSD up to 5.6MHz. And it records to Compact Flash or SD cards, so you don't need to hook it up to a computer, but you can easily transfer recordings to one. Recordings on it sound great, and it's about as easy to use to make recordings as an old school cassette recorder. It generally goes for $1000, but you can find it for less.
Tascam also offers free editing software, which includes DSD editing capabilities. I haven't played with it enough to tell if it's good for clicks and pops, though.
