Your set up sound like one I used to have. I was using a Mac Mini connected to a DAC via USB. Where I differ was that I did't use iTunes exclusively. There are likely varying opinions on this, but I just don't think iTunes is the best program to use for audiophile playback. Because I was using a Mac, I used both Amarra and Pure Music. Of the two, I liked Pure Music the best. But either one was a preference to iTunes. At the time, I used an app called Remote (from the Apple app store) on my iPad to control what music I heard. However, most any playback program now has their own free app for an iPad. There are a variety of playback programs. Some are more geared for a Windows platform, others (like the two above) are more geared for a mac platform. Another comment mentioned J River which is excellent for a Windows platform. It is, in fact, what I am using right now. And J River has an app called J Remote that allows the control of the music with an iPad. You might consider exploring the use of a separate playback program that plays nicely with the make of your laptop, and if that program has its own app, use it for iPad control. Bottom line, there are quite a few options for audiophile quality playback using either a Windows or a Mac platform and most all of them have their own app or work well with a separate iPad app. Best of all, most all of these programs allow you a free trial period so you can evaluate before buying.
