The amperage rating of the power supply is the maximum the walwart (or any power supply) can supply. The device, in this case your DAC, will draw the current IT needs at the given voltage. Going higher amperage will just allow a higher reserve of current. It doesn't mean that the device uses it. What it does is allow the power supply to run cooler and under less stress.
There is a relationship between the load (resistance), voltage and current that is called "Ohms Law". Google that for more info. This law applies to everything electrical and electronic.
One thing, though, don't exceed the voltage.
