Nice post. To me, "analogue sounding" means music that is very smooth, and I can listen to it for hours (days?) with zero fatique. I am a vinyl guy, and that is my main test, really. A detailed sound, yet with no brightness, glare or other digital nasties. Even, full, and linear dynamic range. A "human" sound. It just "flows". To me, good analogue sound is continuous--like a river.
It really is subjective. You have to buy what sounds good to you. There is no turn-key approach. I just know what I like.
Charles Hansen has commented on the value of a good dealer, who will help you through the process---letting you take gear home to audition. I absolutely agree. Buying something online after reading a few hot internet posts, is the path to frustration.
I also have often heard very good comments about Ayre gear.
