The PS3, and probably most stand-alone Blu-ray players, will convert the soundtrack to 2-channel PCM, if that's what you need. As far as the comparison to DVD soundtracks, Blu-ray movies commonly use DTS at 1.5Mb/s or Dolby Digital at 640kb/s (both in lossy mode). This means the sampling rate will be at 48kHz and the bit depth will be anywhere from 16 - 24bit for the encode. DVD normally uses DTS at 768kb/s and Dolby Digital at 448kb/s, with bit depth anywhere from 16 - 20bit for the encodes.
Where you will probably see the greatest audio improvement is with the multi-channel PCM tracks. These will be 48kHz for the sampling rate and have a bit depth anywhere from 16 - 24bit. However, these are uncompressed PCM soundtracks, not lossy, so sound quality is first rate (as far as movie soundtracks go).
Also, there are concerts being released for Blu-ray. Many of them are recorded with 96kHz sampling rates using 24bit for the encodes (ie, the Chris Botti concert is 5.1 24/96).
