"Just wondering if anyone's noticed a trend in newer players (vs stuff from 10-20 years ago) toward a thinner, brighter sound."
I've not only noticed it, but have cited it repeatedly.....
Except in most cases, it's people making about three or four upgrades, then going back to their original player, and are stunned over how good the original player sounds...... Often better than what they've been most-recently using
Most modern players have what is known as "24/192 upsampling", and although a nifty marketing buzzphrase, this "feature", known as asynchronous conversion, has led to a new generation of awful-sounding digital playback.
"I suppose we can try to alleviate the problem with correct cable selection."
I'd just go to eBay and get a vintage player (or even an identical player) in fine condition. Not only will your ears appreciate it, but also your pocketbook.
