In your post above, you stated:

That "coaxial audio connector" provides a standard line-level analog monophonic signal as the TV is NOT equipped with a NICAM decoder to decode the broadcast signal (when available) into stereo.
In the diagram above I have assumed that your RCA HT Receiver has the standard composite input socketry which usually comprises 3 x RCA sockets (Yellow, White, Red) to allow a vidcam to be connected via the front panel. The Yellow socket is for composite video and the White (Left) and Red (Right) are for the Audio feeds from the vidcam.
If this is the case, then your connector cable needs to be a simple 1-into-2 "Y-cable" and connected as shown. Some sets configure the Left channel for Mono feeds - in which case all you will need is a single RCA-RCA lead and not the "Y-cable".
If, however, the front panel audio connection is via a stereo mini jack socket, the your cable link needs to be a RCA-to-Stereo Mini Jack cable with Left/Right commoned.
Not being able to download a manual from the RCA website, it is impossible to determine what spare socketry exists on the Rear Panel of the RT2760. If there happens to be a spare selectable analog audio input pair, then use the RCA "Y-cable" but connect to rear panel sockets.
I'm afraid you're not going to have any joy trying to obtain a digital audio signal from the TV to feed into your HT Receiver as the TV is not equipped an Analog-to-Digital Converter (ADC) which would be essential to convert the analog soundtrack signal from analog to digital...
