I've always read that you use something like the 2/3 and 1/3 for bi-wiring Cat 5, but have no direct experience with that. I have used and made several Cat 5 cables to my and friends' delight, though. Here's an old recipe for testing how many wire to use: Make up your full cable with the max wires/pairs you think you want overall. Tie them all together into the spades (separated by white and colored/striped as usual) at the amp end. At the speaker end do not use spades until you are settled on the exact formula. Now separate the wires into colors at the speaker end as usual. Then use only the smallest amount of wire for the tweeter that you think you'd need; keep adding until you find the sound goes beyond your preference and stop there. Use all the rest for the mids and finish off with your spades.
You could run the test in the other direction, starting with the mids just to check the results.
