If you could build a Sherwood design today with all the same tubes and iron it would sound almost the same.But circuits are most often different today.Many modern tube preamps use a single gain stage that require reverse polarity at the speakers. And then whether global feedback is used and how much all affect sound.
To me most modern tube amps have less noise and do sound more analytical but that's fine.
As a current and former owner of tube amps most old amps sound different. They almost always have a larger noise floor and can be a little soupy sounding which has an allure to many.
This can tame average or less than rock recordings which most are for instance to the point they sound better or less offensive but on a good recording I want modern better built high parts quality gear with no potentiometers any where in the pre or power amp.
