I can see no mechanism for the heaters to have any effect at all on the sound except for adding noise.Just a bridge with a large cap following it will give a saw tooth ripple and often add more audible noise than AC would. (a "buzz" instead of a hum)
A bridge followed by a critical inductance choke and then a cap will give a lot less ripple and the ripple that remains will be sinusoidal and thus easier to listen to even if some of it "leaks" into the music.
Are you sure the heater voltage is the same as it was before the change?
High or low heater voltage will definitely change the sound of a tube stage.
A tube needs the proper amount of heat for the cathode to emit electrons at the proper rate to maintain a proper electron cloud.
That's the only thing I can think of to account for what you're reporting.
