 I was wondering whether anybody know of a simple and practical way of testing whether or not a particular cable was well shielded against electrical or magnetic interference from adjacent sources.

 Turn up the volume and grab hold of the cable in the insulated area. You Bod acts like an antenna for hum and noise and you can get an idea of the cable's shielding effectiveness.
