Some Ipods have great sound, just not in stock form. You have to go direct from the DAC. Here is a link, lots of good info online.

I just use the iPOD for air travel and often in the dark. I output to earphones only. This is the context of my post.
I do not think it matters if the lights are on or off. When the older one are modified one would use a portable amp to drive headphones. Not worth the work now as a allot of good sounding players are available.
Very important on a plane half asleep. Press button on iPOD, the thing lights up and 'blinds' you. Ahh....

That mod is for the old HDD based iPod Classic. No need for such mods on newer iPods, iPads, iPhones that have the Lightning connector. That connector provides a digital output signal for driving an outboard DAC directly.
That's how I attach my iPhone or iPod Touch to my car's audio system. The other end of the Lightning cable has a USB plug which plugs into my car's USB port. The digital audio signal coming through the Lightning connector is fed to the car audio system's DAC directly..... completely bypassing the iDevice's internal DAC and analog stage.
Similarly there are headphones on the market that use the Lightning connector on the iDevice. Those headphones have their own built-in DACs.

I think the 5th version and the Ipod Photo were better that some of the other old ones. I have a modded Photo put in a 240GB drive and it does sound very nice.
Lots of good portable players available now so probable not worth the trouble. As Gordon said they can be a real pain to get open even with the proper tools.
