I modified the recipe by rubbing the breasts with garlic olive oil, crushed garlic and fresh rosemary, then I sprinkled the flour on them and followed the recipe exactly.
Absolutely work class.

Chicken breast is a good choice for an easy, low time, lo-cal and low cost main course but the flavor is worse/less than ever these days with how chicken is "raised". My go to of late when I eat it is to butterfly it, quick marinade (10 min max) of Three crabs fish sauce, Golden Mountain oyster sauce and green lid Sarachia Garlic Chili sauce.
Not too much fish sauce (1tbsp) and Golden Mountain is the only oyster sauce I can find where oyster extracts is the first ingredient and not sugar or corn syrup. This is important because I grill it quick at a high temp and sugar will burn. Three tbsp. Finally I prefer this "Rooster" as it is more flavorful and garlic-ee. 6 to 8 tbsp. Also add a splash of olive or peanut oil, peanut oil is neutral and has a higher flash point and is better in my opinion. It grills quite quick at a high temp, preheated to 600F and gets added flavor from the grilling. Without butterflying a breast it takes too long to grill to well done and can get dry.
