It's hard to overstate how much of a difference decent, modern engineering can make in one's perception of these works. (I know, I'm speaking for myself of course!) Anyway, for the motets and the extraordinary E-minor Mass, I'd recommend the following:Everything on the Hanssler recording is magnificent, especially the choral intonation. I loved the sound in 5.0 MCh - I assume it will also sound great in 2-Ch. If you want to get a bit more of the motets, I also like the Orfeo CD shown above (plain old CD resolution) done by the Czechs. (BTW, the "Choral Mass" on that recording is an early work - it's only about 20 minutes long and not entirely characteristic of the composer.)
For the F-minor Mass, I have the Janowski/Pentatone recording with the Berlin Radio Chorus and the OSR (whose transformation into a Bruckner orchestra has already been discussed here):
A bit of caution with the F-minor Mass: there's an HDTT recording available which, although generally performed and recorded well, features a soprano with one of the biggest wobbles I've heard - If you love HIP, you'll hate this! (Even I hate it!) There's also a Celibidache recording of the F-minor Mass, but I think that the only way to get it now is to acquire his big Bruckner boxed set on EMI - I'm guessing you may not want to do that. BTW, there's a DVD of Celibidache rehearsing this work - but the whole disc is devoted to the rehearsal. There's no actual performance!
For D-minor Mass (which I do not know as well), I thought that the Matt performance on Brilliant was fine. Again, I've listened to the Janowski and Matt performances only in MCh, but I'm assuming that the 2-Ch versions will also be fine.

Regarding the Bruckner Mass No. 3 in F-Minor: the soloist parts in this hour-long "Great Mass" are brief and inconsequential. The symphonic writing for large chorus and symphony orchestra is the meat of this work, and Bruckner is at his best. Sorry the soprano was a disappointment, but I would say her final ff entry in the Agnus Dei brings chills to my spine! I hope in auditioning the HDTT recording (which I engineered) you were able to hear it in 5.0, which is most impressive -- especially in capturing the 32' organ stops in the fortissimo passages.

I just had a real blind spot with the soprano on that recording though. Yes, I have the 5-Ch incarnation, and I'll re-listen to that Agnus Dei later today!
