Yes - it's interesting to choose one standard and run through a dozen or so versions.What's interesting is that if your main interest is the lyrics and how real and genuine they come across, then you often get that from popular singers, not jazz ones. You get some great singing from the likes of Ella and Sarah Vaughan, but neither really plumbed the depths of the lyrics, Ella especially often sounding quite disengaged.
I'm surprised these days at how little I listen to Billie Holiday, and especially late recordings. There are many other singers I'd prefer to hear.
