I do believe that a 2 channel recording can be done that simulates what you heard. It's just not done. After all who would buy a stereo recording that didn't shout it was stereo? Not many would. It's sort of like a speaker that doesn't sound like it's producing bass all the time, even when the music doesn't really sound that way. Most people won't buy a speaker 'without bass'.
